Birthday cake - grain-free, gluten-free, dairy-free and no refined sugar

This is a healthy birthday cake that is relatively easy and quick to make. It contains lots of fiber, protein, minerals, healthy fats and it does not contain any grains, dairy or refined sugar. 

Ingredients for the cake

  • 4 eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut sugar (optional if you want it sweeter)
  • 1/2 cup melted coconut oil
  • 2 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup hazelnut meal
  • 1 cup tapioca flour
  • 2 tbs raw cacao or unsweetened cocoa powder
  • 2 tsp baking powder
  • pinch salt

Ingredients for the cream

  • 3 cups raw cashews
  • 1/2 cup maple syrup
  • 1 tbs vanilla extract
  • 1/2 cup full fat coconut milk
  • 3 tbs raw cacao or unsweetened cocoa powder

Instructions for the cake

  1. Beat the eggs.
  2. Add maple syrup and coconut sugar (optional), mix well.
  3. Add melted coconut oil, vanilla extract and mix.
  4. Add all the remaining ingredients and mix until smooth and well blended.
  5. Transfer the batter into a greased or non-stick cake dish.
  6. Bake in pre-heated oven in 365 F (180 C) for about 20 - 25 minutes.
  7. Once done, let it cool down. When completely cooled, take it out of the cake dish.
  8. Slice it in the middle to apply the cream.

Instructions for the cream

  1. Soak the raw cashews in water overnight or for at least 2 hours in hot water.
  2. Drain the water and put the cashews in a blender or food processor.
  3. Add maple syrup, coconut milk, vanilla extract and blend until smooth.
  4. Transfer about a half of the cream into a bowl.
  5. Add raw cacao or unsweetened cocoa powder to the other half and blend.
  6. You can place the creams in a refrigerator for a while to let them set or apply it to the cake right away.
  7. Decide how you want to distribute the cream and how you want to decorate the cake.
  8. You can spread half of the chocolate cream in the middle of the cake and another half on top of the cake and decorate with the white or the other way around.
  9. Store in a fridge.
