Grain-free cake with farmer's cheese


I sometime make this cake for the kids to have for breakfast the next day when I need to save time in the morning. It’s grain-free, doesn’t contain any refined sugar and is fairly easy and quick to make. You can also add some berries or other fruit into the farmer’s cheese filling if you prefer.


  • 3 eggs

  • 1/2 cup maple syrup

  • 1/2 cup coconut flour

  • 1/2 cup almond flour

  • 1/2 cup tapioca flour

  • 1 tsp vanilla extract

  • 1 1/2 tsp baking powder/soda

  • 1 medium apple, peeled and coarsely grated


  1. Beat the eggs, add maple syrup and mix.

  2. Add all the remaining ingredients except for the apple and blend well together.

  3. Add the grated apple and blend into the batter.

  4. Transfer the batter into a greased or non-stick baking dish and set aside.

Ingredients for the filling:

  • 1 lb (16 oz) farmer’s cheese

  • 3 eggs

  • 3 tbs maple syrup (more if you want it sweeter)

  • 1 tsp vanilla extract

  • 1/2 cup full fat milk


  1. Mix everything together.

  2. Pour on top of the batter.

  3. Bake in 365 F for about 35 - 40 minutes or until done.

  4. Let cool down completely before serving!
