Valentine's day chocolate cake - gluten-free, no refined sugar


Happy Valentine’s day! I decided to make a cake for my husband and the kids but I only had about an hour to make it so this is a quick and easy recipe that I put together.


  • 5 eggs

  • 1 cup coconut sugar

  • 1/2 cup melted coconut oil

  • 1/2 cup tapioca flour

  • 1/2 cup coconut flour

  • 1 cup almond flour

  • 1/2 cup white rice flour

  • 2 tbs unsweetened cocoa powder (or raw cacao)

  • 1/2 cup coconut milk (unsweetened)

  • 2 tsp baking powder/soda

  • 1/2-1 cup dark chocolate chips/chunks


  • Mix all the wet ingredients together.

  • Add all the wet ingredients and blend well together.

  • Add the chocolate chips / chunks as a last step and mix it into the batter.

  • Transfer into a greased or non-stick baking dish.

  • Bake in 365 F for about 20 - 25 minutes.

    Ingredients for the cream:

  • 10 tbs soften, room temperature butter

  • 4 oz (110g) soften, room temperature cream cheese

  • 1/2 cup melted dark chocolate chips / chunks

    Instructions for the cream:

  • Mix the butter and the melted chocolate together until smooth.

  • Add the cream cheese and mix together.

  • Transfer into the top of the cake and spread evenly.

    Decorate with chocolate dipped strawberries, fruit or anything else you’d like.

    Store in a fridge!
