This is a very nutritious dessert or a snack that will give you tons of energy, will keep you full and will satisfy your sweet tooth. And kids love it too! This recipe contains anti-inflammatory coconut oil, the nuts provide a good quality protein, essential fatty acids and vitamin E among other valuable nutrients. Dates are fairly rich in niacin, potassium, calcium, and magnesium. They are surprisingly high in iron, about 10 medium dates contain 3 mg of iron. The recommended daily amount for iron is 8 mg for adult males, 18 mg for adult females as women loose more iron with menstrual periods (8 mg after 51 years and older) and between 7 - 15 mg for kids depending on their age.

Ingredients

8 pitted dates

1/2 cup walnuts

1/2 cup pecans

1/2 cup almonds

2 tablespoons unsweetened cocoa powder or raw cacao

1/2 cup melted coconut oil

1/3 cup shredded unsweetened coconut (optional for coating)

Instructions

Put all the ingredients in a food processor and blend until a dough consistency is reached. You can leave little pieces of nuts if you prefer crunchier texture. Once done, form little balls with your hands and coat in coconut (optional). They will be ready to eat after resting in a fridge for about 2 hours. Enjoy!
