Coconut flan - gluten free, dairy free dessert with only 4 ingredients!
Do you feel like dessert but don't feel like going through the hassle of baking or making anything too complicated? Try coconut flan. The traditional flan is made using a regular cow's milk, condensed or evaporated milk. I wanted to make a little more healthier version so I used canned coconut milk instead. It turned out pretty good and quite tasty as well. So, if you enjoy custard desserts, this recipe might be right for you.
- 4 eggs
- 1 can full fat coconut milk
- 3-4 tablespoons maple syrup depending how sweet you want it (feel free to use honey or agave syrup instead)
- 1/2 cup shredded coconut
Preheat oven to 365 F (180 C).
Put eggs in a mixing bowl, mix well using a whisk or a hand mixer.
Warm the coconut milk on a stove, add maple syrup, mix it well and remove it before it starts to boil.
Add warm coconut milk to the eggs, add shredded coconut and mix well again.
Pour the flan mix into a non-stick baking dish. The silicone or glass ones are probably the best. A smaller baking dish is preferable.
Place the flan dish in another baking dish or pan with higher edges that is slightly bigger, add boiling water around it (about 3/4 of the flan dish).
Put it in the oven and bake for about 45 to 1 hour or until a toothpick or knife comes out clean. It should be jiggly and not completely firm.
Once done, let it cool down completely before flipping it over on a serving dish or tray. You can also keep it in the baking dish and cut slices if you prefer. Refrigerate before serving.
You can sprinkle it with shredded coconut and use fresh fruit or nuts for garnish. If you desire more sweetness, pour maple syrup on top. I hope you will enjoy it as much as I do.
