Glazed almond bars - grain-free, dairy-free, no refined sugar

Very easy and quite quick to make, these almond bars are grain-free, dairy-free and contain coconut sugar instead of a regular, highly refined white sugar that everyone should stay away from as much as possible. Unlike regular sugar, coconut sugar is a low-glycemic sweetener meaning that it will absorb slowly into the bloodstream and will not cause the ups and downs of the blood sugar level. It is full of valuable nutrients such as potassium, calcium, magnesium and zinc and 16 vital amino acids that are the building blocks for all life.

Ingredients for the base

  • 2 eggs
  • 2/3 cup coconut sugar
  • 1/4 unsweetened almond milk
  • 2 tablespoons maple syrup
  • 1 tablespoon vanilla or almond extract
  • 1/2 cup melted coconut oil
  • 2 cups almond flour
  • 2 1/2 teaspoon baking powder
  • pinch salt
  • 2/3 cup coarsely chopped raw almonds

Ingredients for the glaze

  • 1/2 cup organic silken tofu
  • 2 tablespoons tapioca starch
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract

Directions for the glaze

  1. Place the silken tofu in a food processor.
  2. Add all the other ingredients and process until a smooth consistency is reached.

Directions for almond bars

  1. In a mixing bowl, beat the eggs with coconut sugar.
  2. Add all the wet ingredients and mix well.
  3. Add all the dry ingredients into the same bowl and mix well again.
  4. Transfer the dough into a nonstick or greased 9-inch (22.5 cm) square pan.
  5. Evenly sprinkle the almonds over the top.
  6. Bake in the oven in 350 F (180 C) for about 15 minutes until the base turns light golden brown.
  7. Remove from the oven, drizzle with the glaze and return it to the oven.
  8. Bake for another 15 - 20 minutes until the edges are browned and the glaze is mostly set.
  9. Cool completely before cutting into squares.

These almond bars can be enjoyed as a dessert and can also be eaten for a snack or breakfast if you wish!
