Kiwi banana cake - no wheat, no refined sugar

Just another easy and quick dessert containing no refined sugar and no wheat. It does contain dairy so if you are lactose intolerant, you can make coconut whipped cream to put on top instead of the cream.

Ingredients for the batter

  • 3-4 eggs
  • 1 cup coconut sugar (or any other unrefined sweetener of your choice)
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1/2 cup sweet white rice flour
  • 1 cup oat flour
  • 2 teaspoons baking powder
  • pinch salt

Instructions

  1. Beat the eggs with coconut sugar in a mixing bowl.
  2. Add all the wet ingredients and mix well.
  3. Mix all the dry ingredients in another bowl.
  4. Combine wet and dry ingredients and mix.
  5. Transfer the batter into a non-stick or greased baking dish.
  6. Bake for 30 - 35 minutes in 365 F (185 C) or until toothpick comes out clean.

Ingredients for the cream

  • 1 cup Creme Fraiche (french style cultured cream)
  • 1/2 cup maple syrup
  • 1 cup organic cream cheese (8 oz)
  • 1 cup organic heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Mix Creme Fraiche, cream cheese and maple syrup until smooth.
  2. Add vanilla extract and heavy whipping cream and mix again but make sure not to over mix it once you add the whipping cream.

Spread the cream on the cake and place sliced banana and kiwi on top. You will need about 1 - 2 bananas and 2 kiwis. Store the cake in a refrigerator.
