  • 1 cup millet
  • 3 cups water
  • 3 tablespoons maple syrup (or any other sweetener of your choice)
  • 2 large carrots
  • 1 apple
  • 1 tablespoon lemon juice
  • 1/2 cup raisins
  • 1 cup shredded coconut

  1. Put washed millet in a pot, add water and bring to boil.
  2. Once boiling, turn the heat down to medium and let it simmer for about 20 to 25 minutes until done (it should be pretty soft). Stir it every once in a while.
  3. Remove it from the stove and let it cool down.
  4. Place the millet in a mixing bowl, add shredded carrots and apple, raisins, lemon juice and mix it well. You can add more maple syrup (or any other sweetener if you want it sweeter).
  5. Form small balls with your hands and cover them in shredded coconut.

This makes about 25 - 30 balls depending how big or small you make them. Store in a refrigerator.
