No bake matcha green tea cheesecake - grain-free, refined sugar-free

Delicious dessert for all green tea lovers! This tasty treat does not contain any grains and it's not overly sweet as there is no refined sugar added. The nuts in the crust provide a great amount of valuable minerals, healthy fats and fiber and the matcha green tea is a powerful antioxidant beneficial for our health. And the best part is that there is no oven involved so it will take less than half an hour to make. If you love green tea, you will enjoy this creamy yet light, rich, flavorful and fresh dessert.

Ingredients

for the crust:

  • 1 cup mixed nuts (almonds, pecans, walnuts)
  • 2 tablespoons melted coconut oil
  • 4 pitted dates
  • 3 tablespoons shredded unsweetened coconut

for the filling:

  • 1 mascarpone cheese 8 oz (226 g)
  • 2 soften organic cream cheese 8 oz each (227 g each)
  • 4 tablespoons soften organic butter (preferably grass-fed)
  • 1/3 cup maple syrup
  • 1 1/2 tablespoons matcha green tea powder (or only 1 tbs for less green tea flavor)

Instructions

for the crust:

  1. Put all the ingredients in a food processor and process until a dough consistency is reached.
  2. Press the dough into a pie dish 9 x 1.5 in (22.9 x 3.6 cm).
  3. Place in a refrigerator while making the filling.

for the filling:

  1. Put the mascarpone and soften cream cheese and butter in a mixing bowl and mix until smooth using a mixer.
  2. Add maple syrup and mix well again.
  3. Add matcha powder and mix into the cream.
  4. Pour the filling over the crust and spread evenly.
  5. Place in a refrigerator for at least one hour before serving.
