Quick pear apple cake - one bowl recipe, grain-free, dairy-free and refined sugar free
Fall, apples and pears go together and I love them all. Apples and pears are rich in antioxidants, anti-inflammatory flavonoids, vitamins and dietary fiber. They reduce the risk of developing cancer, diabetes and heart disease. This pear apple cake recipe is simple and quick and ready in less than 1 hour!
1/2 cup maple syrup or raw honey
1/2 cup melted coconut oil
1 cup almond flour
1 cup tapioca flour
1/2 cup coconut flour
2 tsp baking powder
1 tbs cinnamon
Put the eggs and maple syrup in a mixing bowl and mix until smooth. Add the oil, mix again. While mixing, gradually keep adding the flour and baking powder. Mix util you have a nice smooth dough. Peel and cut the apple into smaller pieces, add it to the dough and mix it using a spatula.
Transfer the dough into a baking dish (grease it if you have a non-stick one). Peel and slice the pear and place on the dough.
Sprinkle with cinnamon. You can also mix the cinnamon in the dough if you prefer.
Preheat oven to 385 F (200 C) and bake for about 30 minutes or until the top turns golden brown. You might also want to do the toothpick test to see if it is done.
