Valentine's candy - white and dark chocolate truffles with peanut butter filling

Happy Valentine's day to everyone! I made these treats for my kids for Valentine's day as they for sure would be disappointed if they didn't get something sweet. I don't want to buy the conventional valentine's candy so I decided to make some at home. These really are just treats, so they will get one piece at a time after lunch or dinner. I used some white chocolate chips so if you don't eat dairy, you can leave the white chocolate out and just make dark chocolate instead. I picked the best white chocolate chips I could find in a store, having the least amount of sugar and containing only real ingredients, no artificial coloring, preservatives, etc. I made 40 pieces of candies using a silicone candy mold.

Ingredients for white chocolate

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Ingredients for peanut butter filling

  • 4 tablespoons organic peanut butter (make sure you use 100% peanut butter with no sugar or oil added)
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup

Ingredients for dark chocolate

  • 5 tablespoons coconut oil
  • 4 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup

Instructions

  1. Melt the white chocolate chips using a double boiler (fill one pot with about a cup of water and place a glass or stainless steel bowl with chocolate chips in it over the pot with boiling water).
  2. Add coconut oil and mix well.
  3. Pour the white chocolate mixture in the silicone molds and you have the first layer done.
  4. For the second layer or the filling, put peanut butter in a small bowl, add melted coconut oil, maple syrup and mix well together.
  5. Fill the molds with peanut butter filling.
  6. To make the last dark chocolate layer, melt coconut oil in a pot, add cocoa powder and maple syrup. Whisk really well.
  7. Fill the molds with dark chocolate as a third and last layer.
  8. If you put the candies in a freezer, they will be done in about 15 minutes. Otherwise, place them in a refrigerator.
