Vanilla walnut cookies - grain-free, dairy-free, no refined sugar

I was inspired by a Czech cookie recipe that we would make every single year for Christmas. My mom would usually make about twenty different kinds of cookies during this time and every year adding one or two new cookie recipe to her repertoire. It is hard work and that's probably why these kinds of cookies are made only at Christmas. So I wanted to create a similar flavor but with more healthy ingredients and I must say, they turned out pretty good. 

Ingredients

for the cookies:

  • 2 cups shredded walnuts (use a food processor or a blender)
  • 2 cups almond flour
  • 5 tablespoons of coconut oil in the solid form
  • 2 egg yolks
  • 1 tablespoon vanilla extract
  • 4 tablespoons maple syrup
  • pinch salt

for the chocolate glaze:

  • 3 tablespoons of coconut oil
  • 3 tablespoons of unsweetened cocoa powder or raw cacao
  • 2 - 3 tablespoons of maple syrup (depends how sweet you want it)

Instructions

for the cookies:

  1. Mix all the ingredients together.
  2. Once everything is nicely combined and the dough is made, form small balls and place them on a baking sheet lined with parchment paper.
  3. Gently press the balls down creating a cookie shape.
  4. Bake in the oven for 10 - 15 minutes in 365 F (185 C).

for the glaze:

  1. Place the coconut oil in a pot and melt it on a stove.
  2. While whisking, add cocoa powder and maple syrup.
  3. Whisk for a few seconds until well combined.
  4. Spread on top of the cookies.

You can eat the cookies like this or glaze them with dark chocolate for additional deliciousness.
