ABC salad with homemade mayo - excellent health benefits

Apples, beets and carrots! The perfect combination with so many health benefits! This simple salad is packed with many valuable nutrients such as vitamins, antioxidants, minerals and fiber. The list of health benefits is huge so to name a few:

Ingredients

Adjust the amount according to your needs.

  • 1 large coarsely grated carrot
  • 1 coarsely grated apple
  • 1 coarsely grated beet

Mix together, add sea salt and any other seasoning of your choice, fresh herbs and about 4 tbsp of homemade mayo.

Ingredients for the mayo

  • 1/3 cup extra virgin olive oil
  • 1/3 cup avocado oil
  • 1 organic egg
  • 1/2 tsp sea salt
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard

Directions

  1. Place all the ingredients in a mixing bowl and mix for about 30 seconds using a hand mixer.
