Pear, walnut and goat cheese salad


I love this simple and quick salad. I make it with strawberries in the summer and with pears or apples in the fall and winter. It can be eaten as a side dish or by itself for lunch as I often do. It's just a salad but the walnuts and the goat cheese in this salad are so rich and satisfying that you won't get hungry any time soon.


4 cups of lettuce or arugula

1/3 cup of walnuts halves

1/2 cup of goat cheese, crumbled

1 pear thinly sliced


2 tablespoons of olive oil

2 tablespoons of balsamic vinegar



Place the walnuts halves on a baking sheet and roast them in the oven for about 8 minutes in 400 F (200 C). To make the dressing, in a small bowl, whisk together the olive oil, balsamic vinegar and some salt. Put your lettuce or arugula in a salad bowl, add the dressing, toss it, add sliced pears, crumbled goat cheese and roasted walnuts. Gently toss together. Season with salt and pepper if you prefer. This makes about 2 servings.
