Red cabbage - immunity booster


Most people probably know that vitamin C helps strengthen the immune system, therefore, can prevent and fight common colds, flues and other viruses that we tend to catch mostly in a winter time as the weather changes. Citrus fruits are rich in vitamin C but did you know that 1 cup of cabbage has more than 50% of the recommended daily intake of vitamin C? But not only that, red cabbage contains other vitamins, minerals and antioxidants that fight inflammation, protect against chronic health conditions such as heart disease, prevent premature aging, improve skin and eye health, slow down the onset of Alzheimer's disease and prevent cancer.

I must say that it's my favorite vegetable and I could eat it everyday without getting tired of it. Even my two year old daughter eats a full plate and usually asks for more.


1/2 of a medium onion

1 medium size red cabbage

2 tablespoons of apple cider vinegar

sea salt and pepper

1 tbs coconut oil (or avocado oil) or organic butter

cup of water


In a sauce pan heat the cooking oil or butter.  Once heated, add finely chopped onions and let it simmer for a short while. Add washed and cut cabbage (small squares or little noodles, it's up to you), apple cider vinegar, some salt, pepper and let it steam for about 15 minutes or until soft over a medium heat. You can turn the heat down and cover it up with a lid but make sure you frequently stir it. It also helps to add about a cup of water once it's steaming.

It is great to eat it as a side dish with chicken, meat or just with potatoes.
